The people of Paoay, Ilocos Norte are keeping alive their more than 400 year old tradition of Guling-Guling, held a day before the Catholic Ash Wednesday. Dancers fill the street and locals feast on the native delicacy dudol, a form of rice cake made of sugar cane juice, glutinous rice flour, and coconut milk.
